Cuban Cooking

Picadillo

Servings: 6

Ingredients:

  • ¼   cup vegetable oil

  • ¼   cup pimento stuffed green olives, sliced

  • 1    large onion, chopped fine

  • 1    large green pepper, seeded, cored and chopped fine

  • 1    tablespoon capers

  • 1    teaspoon salt

  • 2    garlic cloves, pressed

  • ½   teaspoon paprika

  • 1    pound ground beef

  • 1    8 ounce can tomato sauce

  • ½  cup raisins

  • ¼   cup sherry

  • Directions

    • Heat the oil in a large skillet or Dutch oven and sauté the onions, green peppers and garlic until soft.

    • Add the ground beef and brown thoroughly, stirring.

    • Add the tomato sauce and all the other ingredients.

    • Cook covered for 15 minutes over low heat. Uncover and continue cooking for 5 more minutes.

    • Serve with white rice and fried ripe plantains. At lunch, a typical accompaniment with each serving would be a fried egg.
