Cuban Garlic Sauce - Mojo Cubano
Servings: 1 cup
Ingredients:
4 or 5 garlic cloves
Juice of 1 lime
1 teaspoon salt
¼ teaspoon mustard
¼ teaspoon cumin
½ cup of pure Spanish olive oil
(not light)
1/8 teaspoon ground cloves
1 small onion, chopped
Directions:
• Mash the garlic cloves in a mortar or
with the flat of a large knife on a board with the salt, cumin and cloves to make a paste.
• In a medium sized pan, mix the garlic/
seasoning paste with the onions and the lime juice.
• Just before serving, heat the oil over
medium-high heat, in another pan, until very hot. Add this to the mixture in the first pan very quickly
and carefully because it spatters.
• Serve immediately. It may be reheated by simmering
gently for 5 or 6 minutes until hot again. |
